We understand wine as an upward travel, a trilogy from the variety to the terroir. The first step is a Mendoza appellation Malbec, in which an authentic expression of the singular variety of our country is sought. A sum of young, intense and fascinating fruit. The second step is Quimera, in which we aspire to condense Mendoza as a concept of wine. Malbec, Cabernet Sauvignon, Cabernet Franc and Merlot coming from different regions of the province live together from the cask to be expressed as a designed wine where Cipresso has the freedom and the commitment to hand us the best possible blend every year. The last step is the definitive expression of the soil. It is here that the mark of terroir, understood as the influence of micro-climate, soil and old vines, is found as superior to that of the variety. We can confirm the existence of three different and powerful terroirs: the Altamira, Bella Vista and Mirador properties. By applying the same vineyard and winery work in all three, we achieve extremely low, balanced yields, and notice that the differences in aromas and flavors that exist between the three Malbecs can only be accounted for by the diversity of terroir.
