Picked at optimal ripeness and then gently crushed, retaining 20% whole berries during its fermentation for 10-14 days. During post fermentation, the free run is drained off into oak barriques for up to 14months and is closely checked and racked on a quarterly basis. Our Cabernet Franc is softer and fruitier than our Cabernet Sauvignon and its earthier character consists of tastes and aromas of cherry, blackberry and vanilla with an herbal, white pepper and bramble fruit aroma. The tannins are soft and gentle, and the finish is smooth with a rounded palate.
