On the final morning of the 2008 harvest, these Nebbiolo grapes were picked from frosty vines. Already very high in natural sugar, the grapes were then frozen before being rapidly whole cluster pressed. The rapid pressing quickly separated the dark, cherry red skins from the highly extracted, ultra sweet pink juice. With the juice bursting with flavor, our winemaker chose a long, slow fermentation to capture the pure and sumptuous icy Nebbiolo flavor. Serve chilled.
